Ingredients:
1 cup walnuts 1 ½ tsp salt 4 eggs 1 tsp
cinnamon 2 cups granulated sugar ¾ tsp. baking powder 1 cup
vegetable oil 2 cups grated zucchini ( not pared) 3 ½ cup
unsifted all purpose flour 1 cup raisins 1 ½ tsp. baking
soda 1 tsp. vanilla
Directions:
Chop walnuts in medium size pieces. Beat eggs,
gradually beat in sugar then oil. Combine dry
ingredients. Add to first mixture, alternately with
zucchini. Stir in raisins, walnuts and vanilla. Turn
into 3 greased and lightly floured loaf pans ( 9x 6 x 2 ¾
inches.) Bake on lowest rack at 350 degrees for about 55
minutes, until loaves test done. Let stand about 10 minutes;
turn onto a wire rack to cool.
