Ingredients:
8 ounces white baking bars
1/2 cup butter
1 cup sugar
1 teaspoon baking soda
2 eggs
2 3/4 cups all-purpose flour
1/2 cup seedless raspberry jam
3 ounces white baking bars
1/2 teaspoon shortening
Directions:
Grease a cookie sheet, and set aside. Chop 4 ounces of the
white baking bars and set them aside. In a heavy small saucepan heat
another 4 ounces of the white baking bits over low heat till melted,
stirring constantly; cool.
In a large mixing bowl beat butter with a mixer on medium to high
speed for 30 seconds. Add the sugar, baking soda, and salt; beat
till combined. Beat in the eggs and melted white baking bars till
combined. Beat in as much of the flour as you can with the
mixer. Stir in the remaining flour. Stir in the 4 ounces
chiooed white bars.
Drop dough by a rounded teaspoon abour 2 inches apart onto the
prepared cookie sheet. Bake i a 375 degree oven for 7 to 9 minutes
or till edges are lightly browned. cool on cookie sheet for 1
minute. Transfer to a wire rack to cool.
Just before you serve your creation, heat the raspberry sauce in a
small saucepan and melt over low heat. Spoon about 1/2 teaspoon of
the jam onto the top of each cookie.
