Broccoli in Oyster Sauce

serves 6 to 8

Ingredients:

  • 3/4 cup chicken
  • 1-1/2 pounds broccoli, cut into florets, stems peeled and cut into 1-inch pieces
  • 2 tablespoons finely shredded fresh ginger
  • 1 green onion, shredded
  • 1 garlic colve, minced
  • 1 1/2 tablespoons oyster sauce*
  • 1 teaspoon cornstarch dissolved in 2 teaspoons stock (optional)

Directions:

Bring stock to boil in medium saucepan.  Add broccoli stems, cover and cook until crisp-tender, 3 to 4 minutes.  Drain, reserving /2 cup stock.

Heat oil in wok or large skillet.  Add ginger, onion and garlic and stir-fry.   minutes.  Add broccoli stems and florets and stir fry 2 minutes.  Add oyster sauce, sugar and /2 cup stock and stir fry 2 minutes.  For thicker sauce, stir in dissolved cornstarch and cook briefly.
