Broccoli Medallions with Peas

Ingredients:

  • 1 tablespoon butter
  • 1 cup thinly sliced peeled broccoli stems
  • 1/2 cup tiny peas
  • 1/4 cup water
  • 2 green onions (including some of green), sliced
  • salt and freshly ground pepper
  • 2 teaspoons minced fresh parsley
  • 1/2 teaspoon fresh lemon juice

Directions:

Melt butter in large skillet over medium-high heat.  Add broccolli, peas, water, green onion, salt and pepper.  Cover and cook until vegetables are crisp tender about 5 minutes.  Stir in parsley and lemon juice.  Serve hot.
