Sweet Potato Nut Bread

 

 

Ingredients

  • 1/2 cup Crisco Shortening
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 cup cold mashed sweet potatoes (about 2 medium potatoes)
  • 1 3/4 cups all purpose flour
  • 1 1/4 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup water
  • 1/2 cu chopped nuts (walnuts or pecans)
  • 1 1/2 teaspoons vanilla
  • 1/2 cup raisings

Directions

Heatr ovens to 375 degrees.  Grease one 9 x 5 x 3 inch loaf pan.  Combine Crisco and sugar in large bowl.  Beat at low speed of electic mixer until blended.  Increase speed to medium.  Beat until well mixed.  Add eggs one at a time, beating well after each addition.  Add sweet potatoes.

Combine flour, nutmeg, cinnamon, baking soda, and salt.  Add alternately with water to creamed mixture at medium low speed.  Add nuts, vanilla and raisins, if used.  Spread in pan.

Bake 375 degrees for 60 to 70 minutes or until toothpick inserted in center comes out clean.  Cool in pan for 10 minutes.  Turn out onto cooling racl. 

Makes one loaf
