Sweet Potato Pone

Ingredients:

  • 6 medium sweet potatoes or yams
  • 1/2 cup butter flavor Crisco
  • 1 cup sugar
  • 4 eggs
  • 1/2 cup milk
  • 1 cup biscuit baking mix
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 14 teaspoon nutmeg
  • cinnamon sugar

Directions:

Heat oven to 300 degrees.  Grease and flour 2 x 8 x 2 inch baking dish.  Cook and peel sweet potatoes.  Cut in small pieces.  Combine and peel sweet potatoes.  Cut in small pieces.  Combine butter flavor Crisco and sugar in large bowl.  Beat at medium speed of electric mixer until well blended. Add eggs and milk.  Beat until well blended.  Add biscuit mix and baking powder.  Beat until well blended.  Pour into baking dish.  sprinkle top generously with cinnamon sugar. 

Bake at 300 degrees for  hour to 1 hour and fifteen minutes or until pone pulls away from sides of dish and center is lightly springy.   Cool to room temperature.  Cut into 2 inch squares to serve.
