Sweet Potato & Fruit Pudding
Heat oven to 350 degrees F. Grease 1 to 1 1/2 quart casserole. Cook sweet potatoes until tender. Remove skins. Place in blender or foodprocessor. Add apple juice, pineapple juice, coconut, butter, honey, nutmeg, and cayenne. Process until smooth. Spoon into casserole. Sprinkle nuts over top of sweet potatoes. Bake for 45 minutes. |
