Stewed Greens with Cornmeal Dumplings |
This is a spicy recipe and it has plenty of pot liquor. Codfish can be substituted for the crabmeat.

*Low fat Recipe Ingredients
Directions In a 5-quart Dutch Oven, saute the garlic in oil over medium heat for a minute or so until lightly browned. Add the shallots, okra and chili pepper and cook for 5 minutes more. Add the greens and salt and toss until well blended with the okra mixture. Add the stock, vinegar, and sugar. Reduce the heat and simmer, covered for 45 minutes, while preparing the dumpling batter. Drop a tablespoonful of dumplings into the hot greens and cook for 5 minutes, until dumpling expands to twice the origional size. Pick over the crabmeat ( or codfish) on top. Makes 6 servings. Per serving: 232 caloaries/ 4mg fat/ 39 gm carbohydrates/ 380 mg sodium Corn Meal Dumplings
Directions: Sift cornmeal, flour, bakingowder, salt and sugar into a large mixing bowl. ADd egg, milk, and butter and mix well until smooth. Let sit, covered for 5 minutes. Droop dumplings by the tea spoonfuls into the hot broth and cook ober medium heat for 5 minutes. |
