Sauteed Collard Greens |

Ingredients
Directions Break off and discard stems of collards. Wash leaves throughly. Slice leaves into bite-size pieces by rolling several leaves together and ctting into 1/4 inch stris. Blanch greens in boiling water for 3 minutes, drain well. Melt drippings in large skillet; add onion and cook until tender. Stir in tomato and cook until just tender. Add greeens to onions mixture and stir until well-coated. Cook and stir until tender, about 8 to 10 minutes. Stir in a pinch of nutmeg. Yields 6 servings Yields 4 servings. |
