Lima Beans & Bacon

Ingredients:

  • 4 slices of bacon, diced
  • 2 medium celery stalks, sliced
  • One 10 ounce package of frozen baby lima beans
  • 1/4 teaspoon of salt
  • 1/8 teaspoon of pepper
  • 3/4 cup of water

Directions:

In 10 inch skillet, medium-low heat, cook bacon until browned. Remove bacon to paper towels to drain. Pour off all but 2 tablespoons bacon drippings from skillet. Add celery, frozen lima beans, salt and pepper.

 Cook, stirring frequently until vegetables are tender, about 10 minutes. Add water; over high heat, heat to boiling. Reduce heat to low; simmer 5 minutes. Sprinkle with bacon after spooning into warm bowl.

4 servings.
