Curried Lima Beans

Ingredients:

  • 2-10 ounce packages of frozen limas, cooked, drained
  • 4 ounces of cream cheese, cut in sm. pieces
  • 1/2 cup of onion, chopped
  • 2 tablespoons of butter
  • 1 tablespoon of flour
  • Salt & pepper to taste
  • 1/2 cup of milk
  • 1 tablespoon of curry powder
  • 2 ounces of pimientos, sliced

Directions

Melt butter in skillet, sauté onion. Add flour. Pour in milk and stir until thickened. Add cream cheese. When blended, add curry powder, pimientos and beans.
