Big Mama's Baked Lima Beans

Ingredients

  • 2 pounds dried baby lima beans
  • 1/2 cup chopped onion
  • 1 teaspoon salt
  • 1 cup tomato ketchup
  • 1/2 cup dark molasses
  • 1 pound well seasoned pork sausage

Directions

Cover lima beans with water.  Soak overnight.  Simmer lima beans until they are beginning to soften.  Drain off water until they are just covered.  Transfer to shallow baking dish.  Heat oven to 375 F.

Combine onion, salt, dry mustard, ketchup and molasses.  Stir into beans.  Form sausage into 6 patties.  Place on top of lima beans.  BAke a 375 degrees for 1 hour 30 minutes or until sauce bubbles and sausage is slightly brown.

Serves 6
