Big Mama's Collard Greens

Ingredients

  • 3 bunches of collard greens
  • 4 ham hocks
  • 3 1/2 quarts of water
  • 4 tablespoons of vegetable shortening
  • 1 tablespoon of sugar
  • 1 teaspoon of salt

Directions

Pick, wash and remove the stems from the greens. Boil the ham hock for 1 hour in water. Do not drain. Add the greens, shortening, sugar and salt. Simmer for 2 1/2 to 3 hours or until tender. The secret to perfect collards is to cook until very tender. Serves 6 to 7
