Sweet Potato & Yam Recipes

When I was growing up we had baked yams all the time. Mama had a different way to prepare them.  She use to do it the old fashioned way in the fireplace.  She would make a whole in the hot coal and bury the sweet potatoes (yams) under the coal until they were done. We would all sit around the fire waiting.  They were the best baked sweet potatoes I ever had. Of course we don't cook in the firplace anymore so here is a recipe that you can make.aaa Feel free to browse and as always your suggestions and comments are always welcome.  Comments or Suggestions 

 

                        Baked Yams

 

Ingredients

1 cured sweet potato (yam)

Wash and dry. Bake at 400 degrees for 15 minutes. Reduce heat to 375 degrees and continue baking until potatoes are soft; about 1 hour for medium potatoes and l 1/2 hours for large. Hint: Do not wrap sweet potatoes with foil because it will steam the sweet potato and you will not have that sweet, syrupy flavor of a good baked yam. This is also true of yams cooked in the microwave.
