Ingredients
- 5 slices of canadian bacon
- 2 medium onions, chopped fine
- 1 jalapeno pepper, seeded and minced
- 2 medium tomatoes, peeled, seeded and chopped
- 3 tablespoons tomato paste
- 1 1/4 cups chicken broth
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon cayenne pepper
- 2 cups uncooked long grain rice
Directions:
In a large saucepan, fry bacon until almost crisp. REmove bacon
from the pan and add onions and jalapeno to the pan; saute untol onions
are transparent/ Add chopped tomatoes, tomato paste, chicken
broth, salt and pepper. STir in rice. Cover and cook over
medium heat for 20 minutes. Stir in the crumbled bacon and
continue to cook for 20 minutes or until rice is tender and all liquid
is absorbed.
