Pinto Beans








Ingredients

  • 1 pound dried pinto beans
  • 1 large onion, chopped
  • 1/4 cup bacon drippings
  • 1 ham hock or smoked turkey wing, washed
  • 1 teaspoon onion powder
  • 1 teaspon garlic powder
  • 3/4 teaspoon seasoned salt

Directions:

Place beans in a large colander.  Remove any foreign objects and then wash the beans undr cold running water.  Place the beans in a large bowl and add enough water to cover by 3 inches.  Soak beans overnight.  In a large pot over medium heat, saute onion in bacon drippings.  Add ham hock and enough water to cover.  Bring to a rapid boil, reduce heat, and simmer, covered, for 1 hour.  Drain and rise beans.  Add beans, with additional water if needed to cover.  Cover and simmer for approximately 1 hour.  Add seasonings, stir and cook covered an additional hour or until beans are tender.  REmove lid during last 3o minutes of cooking and allow the beans to cook down, until the broth reaches the desired consistency.  Add aditonal seasongs to your taste.
