Bring a large pot of water to a boil. Wash potatoes and place
in boiling water. When a second boil is reached, cook 30
to 45 minutes or until fork tender. Drain water from pot,
cover and allow potatoes to steam an additional 30 seconds, until
dry. REmove skins. Add cream, butter and salt. Using
an electric mixer, whip potatoes until smooth. They won't however,
be lump-free. Add additional butter, cream, and salt as
desired.
