Fried Potatoes








Ingredients

  • 3 medium baking potatoes
  • 1 large onion, sliced thin
  • 3 1/2 tablespoons bacon drippings
  • 1/4 teaspoon seasoned salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper

Directions:

In a large saucepan, fry bacon until almost crisp.  REmove bacon from the pan and add onions and jalapeno to the pan; saute untol onions are transparent/  Add chopped tomatoes, tomato paste, chicken broth, salt and pepper.  STir in rice.  Cover and cook over medium heat for 20 minutes.  Stir in the crumbled bacon and continue to cook for 20 minutes or until rice is tender and all liquid is absorbed.

4 to 6 servings
