Collard Greens & Smoked Turkey

 

Yield: 8 servings

Ingredients:

  • 1 pound of smoked turkey parts
  • 1-1/2 quart of water
  • 1 or 2 pepper pods
  • 3 cloves minced garlic
  • 4 pounds of fresh collards
  • 1 medium onion
  • 2 stalks celery
  • 1 small green pepper
  • 1 tablespoon of sugar
  • 1 tablespoon of vegetable or olive oil
  • Salt & pepper to taste

Directions

Place turkey in Dutch oven. Add water, pepper pods and garlic. Cover; bring to boil. Reduce heat to low and simmer 30 minutes. Take washed and cleaned greens, sliced to own liking along with celery, onion, green pepper, sugar, oil and seasonings. Cook about 1/2 hour or until greens are done.
