Baked Pinto Beans








Ingredients

  • 2 cups dried pinto beans
  • 1 medium onion, copped
  • 1cup stewed tomatoes, chopped
  • 2 tablespoons paste
  • 1/2 cup molasses
  • 2 teaspoons dry mustard
  • 1 tablespoon chili powder

Directions:

Pick over the beans to remove any foreign objects and soak overnight in enough water to cover by at least 2 inches.  Preheat your oven to 250 degrees.  Drain and rinse the beans.  Place beans and remaining ingredients in a casserole.  Add enough boiling water as necessary to keep the beans suffficiently moist.  Uncover the casserole and let the beans cook 30 minutes longer without adding additional water.
