Kingston Meat Patties

Spicy meat-stuffed pastries with a distinctive yellow crust are.  You can make these with any ground meat you like.

 

 

Ingredients:

Pastry:

  • 2 1/4 cups all purpose flour
  • 1 teaspoon curry powder, preferably Jamaican
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/4 cup vegetable shortening, chilled
  • 13 cup ice water

Filling:

  • 2 tablespoons unsalated butter
  • 1 pound ground beef round
  • 1 medium onion, copped
  • 1/2 fresh hot chile pepper, seeded and minced
  • 1 garlic colve, minced
  • 1 tablespoon all-purpose flour
  • 2 teaspoons curry powderm
  • /12 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground allspice
  • 2 tablespoon tomato paste
  • 2 tablespoons water
  • 1 large egg, well beaten

Directions:

Make the pastry sough.  In a medium bow, stir together the flour, curry powder, salt and cayene.  Using a pastry blender or two knives, cut in the shortening until resembles coarse meal.  Tossing with a fork, gradually sprinkle in the ice water, mixing just until the mixture is moist wnough to hold together when pinced between your thumb and forefinger.  Gather the dough and form it into a flat disk, wrap it in waxed paper, and refrigerate at least  hour or overnight.

Make the filling:  Heat the butter in a large skillet.  Add the ground beef, onion, chile pepper, and garlic.  Cook medium-high heat, stirring often, until the meat is no longer pink, about 5 minutes.  Then add the flour, curry powder, salt, thyme, and allspice, and stir for 1 minute.  Stir in the tomato paste and water and cook until thickened, about 1 minute.  Remove the skillet from the heat and allow the filling to cool completely.

Position a rack in the top third of the owen, and preheat to 400 degrees.    Lighlty grease a baking sheet.

On a lightly foured work surface, roll out the soufh to form a 12 by 4 inch rectangle about 1/8 inch thick. Cut it int eight by 3 inch rectanles.  Place about 1/4 cup of the filling in the center of each rectangle, fold it ober to enclose the filling, and press the edges with a fork to seal th em.  Tramsfer the patties to the prepared baking sheet, and brush them lightly with the beaten egg.

Bake until golden brown, 25 to 30 minutes.  Serveh hot, warm or at room temperature.
