Garlic Pot Roast

Ingredients:

  • 1 (3lb) center cut boneless pork loin roast, tied
  • 1 large garlic clove, cut into 8 slivers
  • 1/2 teaspoon salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup dry white wine
  • 1 tablespoon cornstarch
  • 1/2 cup cold water

Directions:

Preheat the oven to 350 degrees. Using the tip of a small sharp knife, pierce the pork roast with eight deep slits.  Stuff each slit with a garlic sliver.  Season the roast with the salt and pepper, and place it on a rack in the aluminum foil-lined roastin pan.

Bake, basting often with the wine, for 1 hour.  Remove the pan from the oven, and remove the roast and the rack.  In a small bowl, whisk the cornstarch into the water until dissolved.  Pour the cornstarch mixtue into the drippings, return the roast on the rack to the roasting pan, and return the pan to the oven.

Continue baking, basting often with the mixture in the bottom of the pan, until a meat thermometer inserted in the center of the roast roeads 155 degrees for medium-well, about 20 minutes, or longer if desired.  Let the orast stand for 10 minutes befores slicing.
