All In One Meat Loaf Chop your vegetables and put in the bottom of a loaf pan then top with your meatloaf mixture for a delicous all in one meal. |

Directions: Preheat the oven to 350 degrees. Lightly butter a 9 x 5 inch loaf pan. Set aside /2 cup of chopped onion. In the bottom of the prepared loaf pan, toss the remaining onion, the carrot, the celery, potato, 1/4 teaspoon fo the salt and 1/8 teaspoon of the pepper and set the pan aside. In a medium bowl, combine the cracker crumbs, tomato sauce, milk, bell pepper, garlic, Italian seasoning. Worcestershire sauce, and the remaining 1/2 cup onion, 1/4 teaspoon salt, and 1/9 teaspoon pepper. Add the ground round and knead the mixture lightly with your clean hands until combines. Transfer it to the loaf pan, pressing the meat lightly so it adheres to the vegetables. Place the loaf pan on a baking sheet. Bake until a meat thermometer inserted in the center of the loaf reads 160 degrees, about 1 1/4 hours. Let the loaf stand 10 minutes. Frain off the excess fat, invert the meatloaf onto a platter and slice. . |
