Venison Sausage with Honey Sauce

The honey and the wine sauce complliments the vension in this recipe.

 

Ingredients:

  • 1 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon freshly fround white pepper
  • 1/4 teaspoon grated greased nutmeg
  • Pinch of cloves
  • 1 bay leaf, finely crumbled
  • 1 1/2 pounds ground venison
  • 1/4 pound ground beef chuck
  • 1/2 pound ground pork
  • 2 tablespoons vegetable oil
  • 1/2 cup dry red wine
  • 1/2 cup hone\

 

Directions:

Position a rack in the top third of the oven, and preheat to 400 degrees. In a large bowl, combine the salt, ginger, wite pepper, nutmeg, cloves, and bay leaf. Add the venison, chuck, and pork, and knead lightly with your clean hands until combined. Form the mixture into six patties, about 4 inches in diameter and 1 inch thick.

Heat the oil in a large skillet. Add the patties and cook over medium high heat, turning once, until browned on both sides, about 4 minutes. Transfer thepatties to a 9 by 13 inch baking dish.

Drain off all the fat from the skillet. Add the wine, bring to a bil, and cook until reduced by half, abut 2 minute. Remove the skillet from the heat, and stir in the honey unitl blended. our the honey over the patties.. Then ypu bake until the patties are cook to your satisfaction. Serve immediatel, and drizzle with the honey sauce.
