Hoe Cakes
 

 

Ingredients

  • 1/4 cup Crisco Shortening or Crico Oil
  • 1 1/2 cups self rising cornmeal
  • 1/4 teaspoon baking soda
  • 1 1/4 cups buttermilk
  • 1 egg, lightly beaten
  • 1 tablespoon Crisco Shortening, melted

Directions

Heat 1/4 cup Crisco Shortening or Crisco Oil to 365 degrees in electric skillet or on medium high heat in heavy skillet.

Combinecornmeal and baking soda in medium bowl.  Add buttermilk, egg and one tablespoon melted shortening.  Stir jut until dry ingredients are moistened.  Pour 1/4 cup batter intoskillet for each hoe cake.  Fry 1 or 2 minutes or until golden brown on each side.  Add additional shortening, if mecessary.  Drain on paper towels.  Serve immediately.
