Traditional Chitterling "Chitlins" Recipes

 

Ingredients


5 pounds frozen Chitterlings (thawed)
5 cups water
2 stalk celery with leaves
1 large onions (chopped)
2 bay leaves
1 clove garlic (minced)
1/2 cup vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1 whole peeled potato
1 Lemon cut in half
1 teaspoon pickling spice
(put in tea ball)


Soak chitterlings in cold water for at least 2 hours.

Drain and strip as much fat as possible from each piece.
Wash thoroughly in cold water. Make sure it is entirely free of dirt.

Cut into pieces about 3 inches.

Place the Chitterlings with the peeled Potato and the Lemon
in a pot of hot water. Add all the other ingredients to the pot
and cover. Cook 2 1/2 to 3 hours over medium heat until tender.

Serve with vinegar and hotsauce.
