Southern Chitterlings "Chitlins"

 

Ingredients

20  pounds of Chitterlings
1   onion, medium, diced
2   cup diced celery
6   small hot peppers
1   tablespoon Garlic Powder
2   Seasoned Salt
2   tablespoons of Black Pepper
2   tablespoons of red peper
1   cup of cider vinegar
 

Directions:


Soak chitterlings in warm salt water for 30-40 minutes.Cut each into 12 inch pieces. Slit Open. Check and remove any remaining fat particles and debris. 

Wash in warm to hot water 3 to 5 times. Place in large Dutch oven or kettle. Add onion, celery, peppers, Southern Chef Granulated Garlic Salt, Southern Chef Black Pepper and Southern Chef Chitterling Seasoning.
 
Bring to a boil. Reduce heat. Cook on medium-low heat for 4 hours.Add vinegar. Cook on low heat one hour
