Stuff Mushrooms Wrapped in Turkey Bacon

Freshly diced vegetables such as carots or green pepers can also be sauteed and stuffed inside these mushroom caps before wrapping them in the turkey bacon.

Ingredients:

1/2 cup diced onion
6 ounces sliced smoked turkey bacon
nonstick cooking spray
1/2 pound fresh white mushrooms

Directions:

Saute the onion in a nonstick skillet srayed with cookingspray for about 5 minutes or until translucent. Stir constantly so that the onion does not burn (use more cooking spray if necessary). Set aside. Cut each piece of turkey bacon in half (about 3 or 4 inches long).

Wash and dry the mushrooms and remove the stems from the caps by gently twisting them. Stuff the mushroom caps with some of the sauteed onion. Preheat oven to 400 degrees. Roll each piece of turkey bacon around a mushroom cap and stick a toothpick in the center to hold together while baking. Bake in a nonstick roastingpan for 25 minutes or until the turkey bacon is evenly brown. Makes 12 to 15 medium dependingon the size.
