Garlic Shrimp

Ingredients:

  • 2 pounds large shrimp
  • 1 cup olive oil
  • 7 garlic cloves, crushed
  • 1 teaspoon cayenne pepper, optional
  • 1/4 teaspoon grund cumin
  • seasoned salt to taste
  • 1/4 cup finely chopped green onions for garnish

Directions:

Shell and devein shrimp, leaving tails attached.  Wash shrimp in cold water, dry and place in a heatproof dish.  Mix remaining ingredients except green onions, and pour over shrimp.  Marinate in the refrigerator for 2 hours.  Remove shrimp from dish, reserving the oil and seasonings.

Place dish, with reserved oils and seasonings, in a 400 degree oven until oil ishot.  Be careful mot to burn the garlic.  Quickly remove garlic, add shrimp, and return to the oven.  Cook 3 to 5 minutes, until shrimp are pink and oil sizzles.  Remove from oven, drain, stir, in green onions, season with salt, and serve at once.
