Fried Green Tomatoes

Ingredients:

  1. 6 large green tomatoes (about 3 pounds)
  2. 2 tablespoons lemon juice
  3. 1/2 cup cornmeal
  4. 2 teaspoons freshly ground black pepper
  5. nonstick cooking spray

Directions

Slice each tomato into 1/2 inch thick slices.  Sprinkle the lemon juice on the tomatoes.  Mix the cornmeal and black pepper in a plastic bag.  Put the tomato slices into the bag and shake well.  Coat a cast iron skillet or nonstick saute pan with nonstick cooking spray.  For the tomatoes, over medium high heat, until they are light brown oneach side.
