Deviled Eggs

Deviled Eggs #1

Ingredients:

6 eggs, hard-boiled peeled, halved lengthwise
1/4 cup mayonnaise l
1 tsp mustard
1 tsp white vinegar
1/2 tsp salt
Paprika for garnish

Directions:

Scoop egg yolks into bowl. Set aside egg whites.
Add mayonnaise, mustard, vinegar, and salt to yolks. Mash together with fork until smooth.  Spoon mixture into egg white halves.


Deviled Eggs #2

6 hard boiled eggs
2 teaspoons of finely minced onion
2 teaspoons of finely chopped celery
1/4 teaspoon of dry mustard
2 teaspoons of sweet relish
1/4 teaspoon of salt
2 or more tablespoons of mayonnaise
paprika
2 tablespoons of sliced olives or chopped sweet pickles

Cut your hard boiled eggs in half, lengthwise while they are hot. Put the yolks in a bowl and quickly mash with a fork. Add your onion, celery, dry mustard, relish, salt and enough mayonnaise to make a soft paste. Now taste and season it to adjust your seasonings. Rinse your egg whites if necessary, then refill each one with the egg yolk mixture. Arrange on a serving plate and sprinkle lavishly with paprika. Cover with clear plastic wrap and refrigerate for at least 1 hour. This will allow the egg mixture to set. Before serving, garnish with slivers of olives, pickle and or sweet red pepper.
 


 

Deviled Eggs #3


12 hard boiled eggs
1/2 cup of mayonnaise
1/8 to 1/4 teaspoon salt or to taste
1/8 teaspoon pepper or to taste

Cut the peeled and hard-cooked eggs in half lengthwise. Remove the yolks and mash with a fork. Combine the remaining ingredients with yolks and blend well. Refill the egg whites with yolk mixture. Garnish with parsley sprigs, a sprinkling of paprika, small shrimp or crumbled crisp bacon, if desired. Makes 24 deviled eggs.
