Black Bean Salsa

Ingredients
 
  • 1 16 ounce can black beans drained and rinsed
  • 2 cups seeded and chopped fresh tomatoes
  • 1/2 cup chopped black olives
  • 1 cup chopped onion
  • 1/2 to 1 1/2 tablespoons chopped cilantro, depending on taste
  • 3 fresh jalapeno peppers, seeded and chopped
  • 4 garlic clives, minced
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground pepper
  • 2 tablespoons virgin olive oil
  • 1 1/2 cups grilled chicken breast, diced (optional)

Directions:

Combine all ingredients and refrigerate at least 2 to 3 hours before serving.
