Baked Chicken Strips

Ingredients:

  1. 4 boneless, skinless chicken breast halves
  2. 2 tablespoons fresh lemon juice
  3. 1/2 cup whole wheat bread crumbs
  4. 1/2 cup of nonfat parmesan cheese

Topping:

  1. 1 tablespoon coarsely chopped fresh cilantro
  2. 1/2 teaspoon chopped fresh thyme
  3. nonstick cooking spray

Directions:

Preheat oven to 400 degrees.  Cut the chicken breastinto approximately 1 - inch - wide strips.  Sprinkle lemon juice over chicken.  In a bowl, mix togethr the bread crumbs, parmesan, cilantro and thyme.  Roll each strip in the bread crumbs and coat well.  Lightly coat a baking sheet with nonstick cooking spray.  Place coated chicken srips on sheet and spray lightly.  Bake for 20 to 30 minutes turning once or until crispy on both sides.  Serves 6
