Rice and Shrimp Waffles - Soul Food Breakfast Recipe

This Recipe is best served with red pepper Gravy.

 

Ingredients:

  • 1 cup all purpose unbleached flour
  • 1 cup cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground white pepper
  • 1 egg
  • 2 cups evaporated skim milk
  • 1 teaspoon olve oil
  • 1 cup cooked rice
  • 1 cup minced cooked shrimp
  • 2 egg whites

Directions:

Preheat the waffle iron. Sift together all the dry ingredients. Beat the egg and milk together and slowly pour the mixture into the dry ingredients. Stir in the oil and beat until smooth.Fold in the rice and shrimp and set aside for 10 minutes. Meanwhile whip the egg whites until stiff and gently fold into the batter. Ligthly grease the waffle iron and drop the batter into the center of the iron. Cook according to manufacutrer's instructions.

Makes 6 waffles
