Raspberry Pancakes - Soul Food Breakfast Recipe

 

 

Ingredients:

  • 1-1/2 cups all purpose unbleached flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 1/2 cups evaporated skim milk
  • 1 egg
  • 1 tablespoon butter, melted
  • 1 cup fresh raspberries

Directions:

In a large bowl, sift together the flour, baking powder, sugar, and salt. Add the milk and egg, and beat until smooth. Blend in the melted butter and raspberies and stir lightly. Ladle the batter onto a hot griddle and cook for 1 minute, until bubles form over the surface. Turn the pancakes over and cook for another minute until browned.

Makes 8 pancakes
