Potato Cakes - Soul Food Breakfast Recipe

This recipe is the answer for what to do with your left-over mashed potatoes. These are also called potato Pancakes.

 

Ingredients:

  • 2 cups cold Mashed Potatoes
  • 1/4 cup all purpose unbleached flour
  • 2 teaspoon olive oil

Directions:

Shape the potatoes into six patties. Dredge both sides of each patty in flour and refrigerate for at least 1 hour. In a nonstick skillet, heat 1 teaspoon oil over medium heat. Put three of the patties into the skillet and cook for 2 to3 minutes, until golden brown and crisp. Turn the patties over and cook until golden brown on the other side. Drain on paper towels. Add the remaining oil to the pan and repeat cooking with remaining three patties.

Makes 6 cakes.
