Flat White Omelet - Soul Food Breakfast Recipe

 

Ingredients:

  • 1 teaspoon butter
  • 3 eggs whites
  • 1/8 teaspoon salt
  • 1/4 teaspoon freshly ground white pepper

Directions:

In a 12-inch nonstick omelet or sauté pan, heat the butter over medium heat. In a medium bowl, combine the egg whites with the salt and pepper. With a whisk or fork, beat until frothy, about 1 minute. Increase the heat to medium-high and pour the egg mixture into the hot pan. Cook for 1 to 2 minutes, until the top begins to set and the bottom begins to brown. Turn the omelet over and cook a minute more, until it is springy to the touch.

Makes 1 omelet
