| Corn Cakes - Soul Food Breakfast Recipe This delightful dish taste as if they were each stuffed with a delicious ear of corn. Serve with warm maple syrup.
Directions: In a large bowl. combine the cormeal, flour, salt, baking soda, sugar and nutmeg. In another bowl, beat the egg and nilks together and pour the mixture into the dry ingredients. Add the oil and beat until smooth. Stir in the corn and chives. Drop the batter onto a hot lightly greased griddle and cook for 2 minutes, until browned oneach side. Makes 8 cakes Per Serving: 268 calories / 4 gm fat / 53 gm carbohydrates / 158mg sodium
