Corn Cakes - Soul Food Breakfast Recipe

This delightful dish taste as if they were each stuffed with a delicious ear of corn. Serve with warm maple syrup.

 

Ingredients:

  • 1/2 cup cornmeal
  • 1 cup all purpose unbleached flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 tablespoon sugar
  • 1/4 teaspoon nutmeg
  • 1 egg
  • 1/2 cup 1 % fat buttermilk
  • 1 cup evaporated skim milk
  • 1 teaspoon olive oil
  • 2 ears of corn, cooked and kernels scraped from the cob
  • 1 tablespoon snipped chives

Directions:

In a large bowl. combine the cormeal, flour, salt, baking soda, sugar and nutmeg. In another bowl, beat the egg and nilks together and pour the mixture into the dry ingredients.

Add the oil and beat until smooth. Stir in the corn and chives. Drop the batter onto a hot lightly greased griddle and cook for 2 minutes, until browned oneach side.

Makes 8 cakes
