Cornmeal Waffles - Soul Food Breakfast Recipe

 

Ingredients::

  • 1 cup all purpose unbleached flour
  • 1 cup cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 2 cups evaporated skim milk
  • 1 teaspoon olive oil
  • 2 egg whites

Directions:

Preheat the waffle iron. Sift together all the dry ingredients. Beat the egg and milk together and slowly pour the mixture into the dry ingredients. Stir in the oil. Whip the egg whites until stiff and gently fold them into the batter. Lightly greasee the waffle iron and drop the batter into the center of the iron. Cook according to the manufacutrer's instructions.

Makes 6 waffles

Per Serving: 220 calories / 4 gm fat / 39 gm carbohydrates / 240 mg sodium
