Marinated Cole Slaw #1

Ingredients:

1 large head cabbage, shredded
2 green peppers, finely chopped
3 medium onions, finely chopped
1-1/3 cups vinegar
2-1/2 cups sugar
2/3 cup water
1-1/2 teaspoon mustard seeds
1/2 teaspoon turmeric
1-1/2 teaspoons salt

Directions:

Combine cabbage, green pepper and onion in a large bowl; set aside.

Combine remaining ingredients in a medium saucepan, mixing well. Bring to a boil; immediately pour over vegetables. Cover and chill twelve hours, stirring occasionally. Recipe makes six to eight servings.


Marinated Slaw Recipe#2

Ingredients:
8 cups shredded cabbage (1-1/2 pounds)
2 tablespoons chopped pimientos
1/2 cup shopped green pepper
3/4 cup chopped onion
1 cup sugar
1 cup vinegar
1/2 cup water
1 tablespoon mustard seed

In a large bowl, combine the cabbage, pimientos, green pepper and onion. Toss lightly; set aside.
Combine remaining ingredients in a medium saucepan; bring to a boil.

Reduce heat; simmer, uncovered, for 20 – 25 minutes or until slightly thickened. Pour over cabbage mixture.

Cover and refrigerate four hours or overnight. Slaw will keep in the refrigerator for several days. Recipe makes ten servings.
