Sweet Potato Casserole

This is a classic southern soul food recipe that was a special treat in our house for Sunday Dinners.

Ingredients:

  • 6 large sweet potatoes or yams, boiled and skinned
  • 1 stick butter or margarine
  • 1 cup evaporated milk
  • 2 cups sugar
  • 3 large eggs
  • 1 teaspoon vanilla
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon

Topping

  • 2 cups corn flakes, crushed
  • 1 cup pecans, chopped
  • 1-1/2 sticks butter , melted
  • 1 cup light brown sugar

Directions:

Preheat oven to 425ยบ F. Put the sweet potatoes (or yams in a bowl). Add the butter, evaporated milk, eggs, vanilla, nutmeg, and cinnamon. Butter a large casserole dish and pour in the mashed sweet potatoes or yams. Bake uncovered for 15 minutes.

Remove from oven and add the topping of corn flakes, pecans, butter or margarine, and light brown sugar. Return uncovered to oven and bake 15 minutes.
