Mashed Potatoes

Ingredients:

2 pounds sweet potatoes, washed and dried
2 tablespoons softened butter
2 teaspoons Vanilla Extract
1 teaspoon Ground Ginger
1/2 teaspoon Thyme Leaves
1/4 teaspoon salt

Directions:

Pierce each potato twice with a fork so excess steam can escape while cooking. Microwave the potatoes on high 5-10 minutes or until tender, turning potatoes over halfway through cooking. Let stand 5 minutes or until cool enough to handle.

You may opt to boil your potatoes. To do this boil, cut potatoes into pieces and place in a large suacepan. Add cold water to cover 1-inch over potatoes. Bring to a boil; cover and cook over medium low heat for 15-30 minutes or until tender, then drain.

Remove the skin from the potatoes. Place potatoes and remaining ingredients in a large bowl; mash until smooth and well blended.


Makes 4 (3/4 cup) servings
