Greek Salad

Ingredients:

Dressing:

  • 2 T. lemon juice
  • 1 clove garlic, minced
  • 1/2 t. salt
  • 1/4 t. dried oregano
  • 1/4 cup olive oil
  • 1/2 cup sliced black olives

Salad:

  • 4 cups torn red leaf lettuce
  • 4 cups torn green leaf lettuce
  • 1/2 cup thinly sliced red onion
  • 1 medium tomato, diced
  • 1 small green pepper, seeded and chopped
  • 1/3 cup crumbled feta cheese

Directions:

In a small bowl combine lemon juice, garlic, salt, and oregano. Use a whisk or fork to beat in oil gradually. When blended, add olives. Allow to marinate for 30 minutes. In a salad bowl, combine lettuce, red onion, tomato, and green pepper. Toss gently with olives and dressing. Sprinkle with cheese.
