Mushroom - Wine Sauce

Ingredients:

  • 2 tablespoons butter
  • 1 tablespoon chopped parsley
  • 1/2 clove garlic, chopped fine
  • 1 small onion, chopped
  • 1 tablespoon flour
  • 1 cup chicken broth
  • 1/8 teaspoon nutmeg
  • 3/4 pound mushrooms, thinly sliced
  • 1/4 cup dry sherry

 

Directons:

CooIn a saucepan heat one tablespoon fo tthe butter, add the parsley, garlic and onon and cook over medium heat three minutes.  Stir in the flour.  radually add the broth, stirring constantly.  Add nutmeg.

In a skillet heat the remaining butter, add the mushrooms and saute five minutes.  Combine with the sauce and simmer fifteen minutes.  Add the wine and bring to a boil.  Serve with roast meats or poultry.
