Fish Butters
Mustard Butter: Melt six tablespoons butter and add two tablespoons prepared
mustard. Serve on broiled salmon.
Anchovy-Tomato Butter:
To one-quart cup creamed butter add 4 anchovies, chopped fie; one
teaspoon tomato paste; one-half clove garlic, mashed; a pinch of
black pepper. Use on smelts, mackerel, salmon, etc.
Piquant Butter: Cream six tablespoons butter and add one
teaspoon Worcestershire sauce, two teaspoons finely chopped
chutney and two teaspoons chili sauce. Serve on broiled fish
steaks. |
