Hollandaise Sauce

Ingredients:

  • 3 egg yolks
  • 1 tablespoon cold water
  • 1/2 cup soft butter
  • 1/4 teaspoon salt
  • 1/2 teaspoon lemon juice or to taste

 

Directons:

Combine the egg yolks and water in the top of a dobule boiler and beat with a wire whisk over hot - not boiling water until fluffy.

Add a few spoonfuls of butter to the mixture and beat continually until the butter had melted and the sauce starts to thcken.  Care should be taken that the water in the bottom of the boiler, never boils.  Continue add the butter, bit by bit, stiring constantly.  Add the salt and lemon juice.  For a lighter texture, beat in a talespoon of hot water if desired.
