Ingredients:
- 1 clove garlic, minced
- 1/2 cup finely chopped onion
- 2 tablespoons olive oil
- 1/4 cup finely chopped celery tops
- 1/2 cups finely chopped green pepper
- 2 cups finely diced ripe tomatoes
- 1/2 teaspoon sugar
- 1 1/2 teaspoons dalt
- 1/2 cup water
- 1 small bay leaf
- 4 whole black peppercorns
- 2 whole cloves
- 2 tablespoons tomato paste
- 2 tablespoons butter
- 2 tablespoons finely miinced shallots or scallions
- 1 1/2 cups brown
sauce or canned beef gracy
- 2 tablespoons lemon juice
- 1/4 cup Madeira Wine

Directions:
Melt the butter in a saucepan and saute the shallots for five minutes,
taking care that the butter does not brown. Add the brown
sauce and lemon juice. When the liquid boils, add the wone and
simmer gently five minutes. |
