Caper Sauce

Ingredients:

  • 3 tablespoons bacon fat or butter
  • 3 tablespoons flour
  • 1 1/2 cups tonue or beef broth
  • 1/2 cup heavy cream
  • 2 tablespoons or more capers
  • salt and freshly ground black pepper

 

Directons:

Melt the bacon fat in a saucepan, add the flor and stir with a wire whisk unti blended.  Meanwhile, bring the broth to a boil and add all at once to the butterpflour mixture, stirring vigorously with the whisk.  Cook, stirring until thickened.

Add the cream, capers and salt and pepper to taste.  Reheat before serving, do not boil.  Serve with boiled tongue or beef.
