Carrot Salsa

Ingredients:

1/2 - cup baby carrots, diced
1 – tablespoon red onion, diced fine
1 – tablespoon red bell pepper, diced fine
1 – tablespoon yellow bell pepper, diced fine
1 – tablespoon cilantro, chopped
1 – green chile pepper, diced fine
1 – tablespoon fresh lemon juice
1/8 – teaspoon salt
1/2 - teaspoon fresh ground pepper

Directions:

In a glass-mixing bowl, you want to combine carrots, red onion, red and yellow bell pepper,
cilantro, green chile, lemon juice, salt, and pepper. Cover with plastic wrap and place in refrigerator for 30 minutes.
