Pumpkin-Chocolate Chip Cake

 

  • 2 cups sugar
  • 1 1/4 cups vegetable oil
  • 4 large eggs
  • 1 (16 ounce) can pumpkin
  • 3 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3/4 cup semisweet chocolate morsels
  • 3$ cup chopped pecans or walnuts, divided

Directions

Beat sugar and oil at medium speed with an electric mixer 5 to 7 minutes.  Add eggs, one at a time, beating just until yellow dissapears.  Addpumpkins; beat at low speed just until blended.

Combine flour and next 4 ingredients, add to pumpkin mixture, and beat at low speed 2 to 3 minutes.  Stir in chocolate morsels, and 12 cup pecans.  Pour batter into greased and dloured 10-inch tube pan.  Sprinkle with remaining 1/4 cup pecans.

Bake at 350 degrees for 1 hour and 10 minutes or until wooden pick is inserted in center coes out clean.  cool in pan on wire rack 10 to 15 minutes; remove from pan and let cool completely on wire rack.  Yield one 10-inch cake
